Sweet and spicy, cosy and comforting, our one-dish roasted vegetable and halloumi traybake is super simple to make and wonderfully delicious. Our Garlic Jam with Red Chilli brings stacks of flavour to the fold, making this a dish you'll return to again and again.

INGREDIENTS (serves 3-4):

3 tbsp Garlic Jam with Red Chilli

2 courgettes, sliced into 1cm rounds and halved

2 red onions, cut into quarter

2 romano red peppers, seeds removed, sliced

250g Isle of Wight Tomatoes cherry tomatoes

2 tbsp Rapeseed Oil with Garlic

2 Smoked Garlic cloves, sliced

2 blocks of halloumi, torn

Fresh basil to garnish

 

METHOD:

Preheat the oven to 190C.

Place the courgettes, red onions, red pepper and cherry tomatoes into a large baking tray.

Mix Garlic Jam with Red Chilli, oil and garlic, then spoon over the veg. Season with salt and pepper and cook for 30 minutes.

Give the vegetables a good mix, push the heat up to 200C and return to the oven for a further 10 minutes, then add torn halloumi to the tray and cook for another 10-15 minutes until browned.

Serve on warm plates topped with fresh basil, salt and pepper and a little extra Garlic Jam and Red Chilli to taste.
